You don't need to speak the language to order well at Taniguchiya — you need to know when to go and what to expect.

Fukui eats more fried tofu per household than any other prefecture in Japan, by a wide margin, and the reason is partly Jodo Shinshu Buddhism — this is the sect's heartland, and abura-age features in its memorial meals — and partly that Fukui's version is not a thin pouch but a slab. Taniguchiya's is about four centimetres thick and the size of a hand, deep-fried twice in the traditional way, crisp outside and still creamy in the middle.

The shop has been in the mountain village of Takeda since the Taisho period and now runs a restaurant beside the factory where the thing arrives as a course: one whole abura-age for ¥740, or as part of a set with soba or tofu cutlet. It is a single ingredient treated with complete seriousness, up a mountain road twenty minutes from Maruoka Castle, and there is usually a queue.

Beyond the guidebook

**Order the plain one first.** A single whole abura-age at ¥740, grilled and served with soy and ginger. That is the dish. The set meals add soba and sides but nothing that explains it better. **Three-hour lunch window.** 10:00 AM to 3:00 PM, later opening in deep winter. This is not a place to arrive at four. **Closed Tuesdays.** Plus occasional unscheduled closures — the shop publishes them. **Buy some to take away.** The shop next door sells the same product vacuum-packed. It is the most distinctive edible souvenir in the prefecture and it travels. **Combine with Maruoka Castle.** The oldest surviving keep in Japan is about twenty minutes down the mountain, which makes an easy half-day.
