Aso Aka-ushi (阿蘇赤牛) is a regional cattle breed raised on the volcanic grasslands of Mt. Aso. Unlike heavily marbled wagyu, aka-ushi is lean, deep red, and has a distinct minerality from the volcanic-soil grass diet.
