Tsuyama Horumon Udon isn't trying to be a destination restaurant, which is exactly why it's worth the detour.

Tsuyama has eaten beef offal since the Edo period, when the domain was permitted to keep producing yosaku medicinal beef through the years the rest of Japan largely did not eat meat, and the butchery trade that grew up around it left the town with a supply of parts nobody else wanted. Horumon udon is what the local diners made of that: beef offal, vegetables and udon fried together on an iron plate in a sharp sweet-hot sauce, eaten with beer.

It was bar food for more than thirty years before anyone marketed it, and then it came third at the national B-grade gourmet competition in 2009 and the town found itself with a signature dish. Around thirty shops in Tsuyama serve it, each with its own sauce, and the offal is fresh rather than frozen because the butchers are local.

Shops serving horumon udon are spread across Tsuyama City; several long-established ones are a short drive from Tsuyama Station. Others run into the evening as izakaya. Hours and closing days vary widely — the tourist information office at Tsuyama Station keeps a current list.

What locals order

**Offal here is fresh, not frozen, and that is the argument.** Tsuyama has its own butchers and the shops buy same-day. If you have written off horumon on the basis of a chain izakaya, this is a different ingredient. **Every shop's sauce is different.** Sweet, hot, garlic-heavy, miso-based. Locals choose a shop by sauce rather than by offal, and asking which cuts go in is a normal question. **Lunch shops and evening shops are different places.** Check which kind you are heading for. **Tsuyama has been a beef town since the Edo period.** The domain kept producing yosaku medicinal beef through the centuries most of Japan did not eat meat, which is why the offal trade exists here and not in the next town. **Tsuyama Castle is the other reason to be here.** The stone walls are among the largest surviving in Japan and the cherry blossom in April is one of the top displays in the country.
