Tofu Chikuwa sits in a part of Tottori's food scene that doesn't need a translation to be understood.

Chikuwa everywhere else in Japan is fish paste moulded round a stick and grilled. Tottori's is seven parts firm tofu to three parts fish, and the reason is a domain policy: the Ikeda lords, short of money and with an underdeveloped fishing fleet, told the townspeople to eat tofu instead of fish. What came out of that instruction is soft, pale and considerably lighter than the standard version, and it has been eaten here ever since.

It is a genuinely everyday food — sold in supermarkets, eaten with ginger and soy, put in school lunches — rather than a souvenir invented for visitors, which is unusual. The factory shop sells it and runs hands-on sessions where you shape and grill your own.

Karo-cho Nishi, Tottori, in the Karo port district by car from central Tottori. Tofu chikuwa is also sold at supermarkets and roadside stations across the prefecture.

Insider tips

**Eat it plain with ginger and soy.** That is how it is served locally and it is the only way to notice that it is mostly tofu. Grilled or in oden it disappears into the sauce. **Book the hands-on session.** Shaping the paste onto a stick and grilling it takes about half an hour and needs arranging ahead rather than turning up. **Seven parts tofu, three parts fish.** That ratio has been held since the Edo period and is what makes it different. Cheaper industrial versions elsewhere shift it. **It does not keep long.** Fresh tofu chikuwa is a few days at most. It is not a souvenir to carry for a fortnight. **Combine with Karoichi.** The port fish market is a couple of minutes away in the same district.
