Kagoshima ramen is a regional variation of tonkotsu (pork bone broth) ramen distinct from Hakata/Fukuoka style. The broth is slightly lighter, often cloudy-white, and topped with kurobuta pork chashu (Berkshire pork), pickled bamboo shoots, wood-ear mushrooms, and thin straight noodles.
