Minatoya sits in a part of Kagoshima's food scene that doesn't need a translation to be understood.

Keihan is Amami's dish and the format is unusual: shredded poached chicken, thin omelette, shiitake, pickled papaya, dried tangerine peel and spring onion arranged on rice, over which you pour hot chicken broth from a pot. It is more like ochazuke than a rice bowl and it was, by tradition, what the islands served visiting Satsuma officials about four hundred years ago — a dish designed to look generous while a colonised island had very little.

It is a small shop in Kasari at the north of Oshima, near the airport, serving essentially one thing at ¥1,100. Numbers are limited and taken in small groups from 11:30, so it is a booking-and-waiting proposition rather than a walk-in.

Service from 11:30 AM, with parties taken in small groups of up to four at roughly ten-minute intervals after registering on arrival. Keihan ¥1,100; sets with local mozuku ¥1,430 or pork bone soup ¥1,500.

**Register on arrival and wait.** Groups of up to four are called at roughly ten-minute intervals from 11:30. This is not a place you walk into and sit down, and the wait can be substantial. **Pour the broth yourself, generously.** The dish only works when the rice and toppings are properly submerged. Under-pouring is the common visitor mistake. **It is near the airport.** Kasari is at the north end of the island close to Amami Airport, which makes it the natural first or last meal of a trip rather than a detour from Naze. **One dish, essentially.** Keihan at ¥1,100 with two set variations. Do not expect a menu. **Other shops serve it.** Keihan is on menus across the island and versions differ. Minatoya is the origin of the modern form; it is not the only place to eat it.
