Soka Senbei and Matsubara isn't trying to be a destination restaurant, which is exactly why it's worth the detour.

Soka was the second post station out of Edo on the Nikko highway, and the rice crackers sold to travellers there became the standard against which every hard-baked senbei in Japan is measured: rice flour steamed, pounded, dried, grilled over charcoal and brushed with soy. Several shops in the town still let visitors grill their own, pressing the dough with a weighted tile and turning it by hand over the coals.

North of the centre the old highway survives as Soka Matsubara, a 1.5-kilometre avenue of about 630 pines along the Ayase river, designated a National Place of Scenic Beauty. Basho passed through on the first day of the journey that became the Narrow Road to the Deep North and mentions Soka by name, which is why there is a statue of him and of his companion Sora at the southern end.

Soka Matsubara runs north from around Shinmei, Soka City, about a short walk from Soka Station on the Tobu Skytree Line. The avenue is free and open at all hours, with the Yatate and Hyakutai arched bridges along it and the Basho and Sora statues at Osen Park at the southern end. Several senbei makers in the town run hand-grilling sessions; one can seat 36 people at once. Session fees, hours and booking requirements vary by shop — confirm before travelling.

What locals order

**Grilling your own is harder than it looks.** The dough has to be pressed flat with a weighted tile between turns or it bubbles, and the window between done and burnt is short. Shops expect this and it is the point. **Osen Park is where the name comes from.** The stone marking the origin of Soka senbei stands there, along with the statue of Sora, who walked the Narrow Road with Basho. **Two arched bridges over the avenue.** Yatate and Hyakutai, built in the 1980s to carry the path over roads, and they give the only elevated view down the line of pines. **The pines are a National Place of Scenic Beauty.** Around 630 of them over 1.5 kilometres, the surviving stretch of the Nikko highway planting. **Basho stopped here on day one.** Soka is the first place named in the Narrow Road to the Deep North, which for a commuter town twenty minutes from Tokyo is a reasonable claim to make. **It is from Asakusa.** The most reachable of Saitama's local specialities from central Tokyo, and the least visited.
