Hitomoji Guruguru isn't trying to be a destination restaurant, which is exactly why it's worth the detour.

A spring onion, briefly blanched, folded in half and then wound round its own white base into a tight coil, served with vinegared miso. It takes seconds to eat and it is on the table at almost every serious Kumamoto meal.

The reason it exists is austerity. Under the frugality edicts of the Hosokawa domain, retainers were restricted in what they could serve, and this was what a household could put in front of a guest without breaking the rules — one vegetable, presented well. The name comes from the old writing of the onion's name as a single character, and guruguru is simply the winding. It is the cheapest thing on any Kumamoto menu and it is the one that says most about the place.

What locals order

**Eat it in one.** It is wound so that it comes apart in the mouth. Cutting it defeats the construction. **Winter is the original season.** The onions are at their best and the dish is a cold-weather one, though restaurants serve it year-round. **The miso is the other half.** Vinegared sweet miso, made differently by every place. Asking about it is a reasonable conversation starter. **Frugality edicts explain it.** The Hosokawa restricted what retainers could serve. One vegetable, presented with care, was the workaround. That is unusually legible history for a side dish. **It is the cheapest thing on the menu.** A few hundred yen at most, and it is the one dish that tells you where you are.
