Gifu's food culture rewards showing up hungry and unhurried — Takayama Sanmachi Old Town is built for exactly that.

Takayama's Sanmachi Suji (三町筋) is one of Japan's most perfectly preserved Edo-period merchant quarters — three parallel streets lined with wooden machiya townhouses, latticed facades, and sake breweries marked by sugidama (cedar ball) signs. The district developed in the 1600s when Takayama prospered as a timber trading hub under direct shogunate control, and the architecture reflects that wealth: curved eaves, overhanging second stories, and interiors displaying Hida craftsmanship (joinery, lacquerware, carvings).

Unlike many 'preserved' districts, Sanmachi remains functional — the sake breweries (seven within three blocks) still brew, the machiya house working craft shops (lacquer, pottery, textiles), and locals live above the ground-floor businesses. The district is most atmospheric early morning (7:00–9:00) before tour groups arrive, when brewers hose down storefronts and the smell of fermenting rice drifts from cellar vents. Winter snow on dark wood roofs creates postcard scenes.

What locals order

**Brewery recommendations:** Of the seven Sanmachi breweries, three stand out. Funasaka Shuzo (舟坂酒造) offers ¥500 tasting sets of five sakes including their Hida Homare label (smooth, dry, pairs with Hida beef). Harada Sake Brewery (原田酒造) specializes in yamahai-style sake (richer, gamier fermentation). Kawashiri Sake Brewery (川尻酒造場) is the smallest and friendliest — the owner pours personally and explains rice polishing ratios in broken English. **Morning strategy:** Arrive at 7:30 when streets are empty and shopkeepers prepare for the day. Photography is unobstructed. **Beyond Sanmachi:** The adjacent Shimomachi district (5 minutes south) has equally beautiful machiya with zero tourists. Higashiyama Walking Course (1-hour temple loop starting from Sanmachi's east end) passes 13 temples and shrines in forested hills — locals' preferred quiet route. **Hida beef skewers:** Sanmachi is lined with stands selling grilled Hida beef skewers (¥500–800). The beef is Gifu's answer to Kobe — marbled, tender A5-grade wagyu. Best skewer shop: Kyoya (坂口屋), identifiable by the longest queue. Pair with local sake for peak Takayama experience.
