Regional food in Oita says as much about the place as its temples or its scenery, and Nakatsu Karaage is where that shows.

Nakatsu has more than thirty dedicated fried chicken shops for a city of eighty thousand, and with neighbouring Usa and Buzen the cluster passes sixty. The trade started in the 1960s when the first specialist shops opened selling nothing else, and it is takeaway rather than restaurant food: you order by price rather than by weight — five hundred yen worth, a thousand yen worth — and wait about ten minutes while it is fried to order.

Each shop guards its own marinade, built on soy sauce, garlic and ginger in proportions nobody will discuss, and Nakatsu residents hold firm and unmovable loyalties. The chicken comes out lightly coated and juicy rather than heavily battered, and it is eaten standing outside the shop, at home, or in the car, which is why almost none of these places has seating.

Shops are scattered across Nakatsu City rather than concentrated in one district; several long-established ones are within by car of Nakatsu Station and the tourist information office in the station keeps a map of them. Most open late morning and run to early evening, with individual closing days. Ordering is by yen amount rather than by piece or weight, and pieces are fried to order, so allow about 10 minutes. Almost all shops are takeaway only.

Beyond the guidebook

**Order by price, not by piece.** Saying a number of pieces marks you out immediately. Five hundred yen feeds one person generously. **Ten minutes, because it is fried when you order.** This is the whole quality argument and it is not negotiable. Shops that have it sitting under a lamp are not the ones locals use. **Mune and momo are the decision.** Breast and thigh are priced and marinated separately at most shops, and asking for a mix of both is normal. **No seats, so plan where you will eat it.** Nakatsu Castle grounds and the riverside are the usual answer. In summer it will not survive a long drive. **Usa is where the specialist shops began.** The neighbouring city claims the origin of the format and has its own cluster, less famous and equally serious about it. **Nakatsu Castle and the Fukuzawa Yukichi house are both in town.** Neither takes long and both are within walking distance of each other, which makes a karaage lunch the natural centre of a half day.
