Hinase Kaki-oko is the kind of Okayama food stop that locals recommend before any restaurant with a sign in English.

Hinase is an oyster port on Okayama's eastern coast, and kaki-oko is what the fishing families there did with the ones that could not be sold. It is okonomiyaki with an unreasonable quantity of oysters folded through it — twenty or more in a single serving at most shops — cooked on a hot plate and finished with sauce. It was home food for decades before anyone thought to sell it, and the town only started marketing it in the 2000s.

Around a dozen shops in a small port town now serve it, most of them family-run rooms with a couple of hot plates. The oyster season runs roughly October to March and that is when almost all of them offer it; a few keep going year-round using frozen local oysters, which they will tell you about rather than hide.

**Pick up the map at the station.** The tourist office prints a current one every season with hours and closing days, which is the only reliable source — several shops are one-person operations that shut without notice. **October to March is the real season.** Out of season you are eating frozen oysters, which is fine and which the shops are open about, but the difference is obvious. **Twenty-plus oysters in one serving.** This is the whole dish and it is not a garnish quantity. If what arrives looks like an ordinary okonomiyaki with a few oysters in it, you are in the wrong shop. **Most shops cook it for you.** Unlike Hiroshima or Osaka, the assumption in Hinase is that the cook handles the hot plate. Wait rather than reaching for the spatula. **The Hinase islands are the other half of the trip.** Ferries run from the port to Kakui and Otabu, small oyster-farming islands with almost no visitor facilities, and the raft lines are visible all along the coast road.
