Minamoto Masuzushi Museum sits in a part of Toyama's food scene that doesn't need a translation to be understood.

Masuzushi is Toyama's contribution to the national bento canon: vinegared rice pressed into a round wooden tub under a layer of salted trout, wrapped in bamboo leaf, bound with a bamboo hoop, and cut into wedges like a cake.

Minamoto is the maker, and its factory on the edge of the city has a viewing corridor over the production floor where you watch the layering done by hand — the trout laid, the rice pressed, the leaves folded, at speed. It is free. There is a hands-on session at weekends where you make one yourself, a restaurant, and a shop selling versions you cannot get elsewhere. It is an ordinary corporate factory tour and it is genuinely one of the better hours in Toyama city.

Toyama. Car recommended, or by local bus from Toyama Station. Viewing is free, 9:30 AM – 5:00 PM, reduced to 9:30 AM – 4:00 PM in January and February. The hands-on masuzushi-making session costs ¥2,200, runs on weekends, holidays and irregular dates, usually once a day from around 1:30 PM, takes about 60 minutes, is limited to 15 people with a minimum of 6, and is open to elementary school age and above.

Insider tips

**Book the hands-on session if you want it.** It runs roughly once a day on weekends and holidays with fifteen places and a six-person minimum, so it can be cancelled or full. Reserve rather than turning up. **Watch the layering.** The rice pressing and leaf folding are done by hand at speed and that is what the viewing corridor is for. Factory activity is highest on weekday mornings. **Buy the versions you cannot get at the station.** The shop carries seasonal and limited types alongside the standard tub. The standard one is available on every platform in the prefecture; these are not. **Eat it the right way.** Masuzushi is cut with the bamboo hoop still on, into wedges, and is meant to be eaten at room temperature the day it is made. Refrigerating it hardens the rice. **Shorter winter hours.** January and February close an hour earlier at 4:00 PM.
